Our members wanted a wine to enjoy after dinner over dessert with friends and family.  This past harvest, we left some of our estate vineyard’s highly aromatic “Musqué” clone of Sauvignon Blanc hang a little while longer in order to produce this sweet and crisp wine.

Vineyard Notes

This wine is made from our estate vineyard’s highly aromatic “Musqué” clone of Sauvignon Blanc.  After picking part of this block for our “Noir Collection” Sauvignon Blanc, we allowed the remaining rows of these grapes to continue to ripen for an additional five weeks.  During this extra five weeks of ripening, these “Late Harvest” grapes developed very rich and concentrated flavors.

Production Notes

Fermentation:  The grapes were picked in the cool morning and immediately pressed.  After chilling and settling the juice, the clear juice was racked fermented at a cool temperature to preserve the fresh fruit flavors.  When fermentation slowed down, the wine was chilled to retain the remaining residual grape sugar, allowing a classic “late-harvest” richness to complement the concentration of flavor.

Cooperage / Aging:  The wine was aged for 2 months in stainless tank.

Color:  medium straw

Aromas:  melon, fresh pear, with bright floral  and guava notes

Palate:  sweet with crisp acidity, lush flavors of ripe cantaloupe and Asian pear
